Polysaccharides have been used in area of pharmaceutical, food, and cosmetics. Some of these have antioxidant activity. Ageing process is accelerated by free radical reaction, and antioxidants inhibit this process through oxidizing themselves. However, the stability of antioxidants is inversely proportional to antioxidant activity. In here, it is focused stabilizing antioxidants through chemical coupling with polysaccharide using epichlorohydrin. The attachments of antioxidants to polysaccharide were confirmed by 1H NMR, FTIR and UV-vis spectroscopy. The 2,2-diphenyl-1-picrylhydrazyl(DPPH) scavenging assay of modified polysaccharides confirmed the property of antioxidants. Some antioxidants have a common structure which is similar to mussel adhesive protein mimetic polymer, L-3, 4-dihydroxyphenylalanine(DOPA). Thus, it was expect that this structure could improve the adhesion property of the resulting polymers. The modified polysaccharides showed better solubility in water than its raw antioxidants. |
