It is known that lecithin forms reverse spherical micelle in organic solvents. When various additives such as inorganic salts, bile salts, and sugar alcohols are added to lecithin solution, the reverse spherical micelles are converted into reverse cylindrical micelles. When the reverse cylindrical micelles are long enough to be entangled, the oragnogels are formed. In this study, we investigated the effect of water on the reverse self-assembled structures formed by the mixtures of lecithin and additives. Depending on the additives, the sample shows a different trend in the viscosity upon the addition of water. Rheometer and Fourier transfer infrared spectroscopy (FT-IR) were used to study the rheological properties and the interactions between molecules, respectively. Small-angle-X-ray scattering (SAXS) was used to analyze the shape and size of the structures. |
