Improved enzymatic reaction of hydrophobic substrates using bijel |

Because of several advantageous features, enzyme is diversely used in bio-industrial processes. However, as most of enzymes are active in only aqueous phase, developing platform technology for enzymatic reactions required for water-insoluble substrates is still short. In this study, to expedite the enzymatic reaction, we utilized bicontinuous interfacially jammed emulsion gel (bijel) which has enormous interfacial area between two immiscible liquids. We used tributyrin hydrolysis as a model reaction and provide the evidence that interfacial area of two immiscible liquids by bijel is an important factor to proceed efficient enzymatic reaction with poorly water-soluble substrates. Moreover, bijel system showed the 3.91 fold increase in reaction rate than that of biphasic system which is the most common method for the enzymatic conversion of oil-soluble substance. The outcomes indicate that bijel could be a platform material to accelerate the conversion of various hydrophobic materials. |
