In this study, the stability and rheological properties of oil-in-water(O/W) emulsions according to HLB was evaluated by using mixed SPAN and TWEEN system, which are non-ionic surfactants. MS-01 (Span 60 & Tween 60) and MS-02 (Span 80 & Tween 80) were used as the mixed surfactants. The viscosity of emulsion decreased with storage time and increased with increasing HLB value of emulsion. The rate of change of viscosity was also smaller as the HLB value was larger. The droplet size increased with time and decreased with increasing HLB value. Zeta-potential was proportional to the HLB value below the critical concentration of the surfactant. Flocculation or creaming phenomenon occurred a little in all emulsions, but emulsion stability is high until 10th week since phase separation did not occur. |
