Drying of apples with infrared energy assisted with convection
Heat and mass transfer conditions during NIR drying aided by convection were analysed. The influence of temperature of inlet air on drying kinetics, density of the water flux and temperature of dried material were examined. It was stated that increase of inlet air temperature reduced drying time and increased temperature of the material. Infrared-convective drying was compered with convective drying at approximately the same material temperature.
