Modeling of starch saccharification by a two-enzyme system using an artificial neural network
The process of starch hydrolysis is one of the key problems of food industry. An increase of process efficiency can be obtained using a mixture of amylolytic enzymes. Due to high complexity of the reactions an artificial neural network was proposed as an efficient method for modelling the process.
