Effect of the method for manufacturing of starch acetate on its amylolysis
Native starch was retrograded and acetylated with Ac(2)O to prep. products resistant to hydrolysis with amyloglucosidase. The achieved resistance was explained by a high degree of acetylation on the 3(rd) C atom.
