Oxidation of liposomes in the ascorbate-iron (III) model system in the presence of histidine dipeptides
Phosphatydylcholine was oxidized at 37 degrees C in an aq. suspension with FeCl3 and ascorbic acid in presence of carnosine and anserine to study the oxidn.-limiting effect of the histidine dipeptides by detn. of lipid hydroperoxide and malonoaldehyde contents in the reaction mixt. The addn. of 0.25 mM of carnosine effectively inhibited the oxidn. of liposomes under the expt. conditions.
