Use of calcium ions in the thermal-chemical modification of lysozyme
Lysozyme was modified in H2O2 (2% by vol.) with addn. of Ca2+ ions at 90 degrees C to obtain its oligomeric forms showing new antibacterial activity. The modification resulted in an increase in the surface hydrophobicity and conc. of lysozyme dimer and in a decrease of its hydrolytic activity.
