Effects of concentration and temperature on interactions in (L-alanine/L-threonine/glycylglycine plus aqueous D-glucose/aqueous sucrose) systems: Insights from viscosity measurements
Viscosities of (L-alanine/L-threonine/glycylglycine + 1.13 mol kg(-1) aqueous D-glucose/1.27 mol kg(-1) aqueous sucrose) systems have been determined as a function of molal concentration of amino acid/peptide at different temperatures: (298.15, 303.15, 308.15, 313.15, 318.15, 323.15, and 328.15)K. Using the viscosity values of the solvent and solution, viscosity B-coefficients, activation free energy (Delta mu(2)degrees(#)), activation enthalpy (Delta H-2 degrees(#)) and activation entropy (Delta S-2 degrees(#)) values have been computed. The computed Jones-Dole B-coefficients and activation free energy (Delta mu(2)degrees(#)) values have been discussed in terms of ionic-hydrophilic, hydrophilic-hydrophilic and hydrophilic-hydrophobic interactions; and structuremaking/structure-breaking tendency of amino acid/peptide molecules.
