Formation of Two-Phase Multiple Emulsions by Inclusion of Continuous Phase into Dispersed Phase
As the fraction of the emulsion drops increases, emulsion inverts from one morphology to the other above a certain fraction of the emulsion drops. It seems that the formation of multiple emulsions is the precursor to this inversion. We have also observed that the formation of multiple emulsions W/O/W for the inversion of O/W to W/O for an amphiphile/oil/water system. However, the emulsion inversion path is quite different from previous observations. In the previous studies inversion took place through the morpholoy change of O/W to W/O/W to W/O. However, in our study the inversion took place through the change of W/O/W to O/W to W/O. That is, multiple emulsions are formed first by inclusion of W phase into O-phase drops. These results are confirmed by electrical conductometry and optical microscopy.
