Mixer as an ice cream pasteurizer
Turbine-paddle stirrers were used in a baffled mixer to verify its applicability for prepn. ice cream blends. Mixing power, fluid velocity distribution, velocity fluctuation and energy dissipation rates were detd. The perforated stirrer was slightly more efficient than a solid one.
