Calculation of temperature optimum as well as activation and deactivation energy for the olive oil hydrolysis with porcine pancreas lipase
Exptl. data on the temp. relationship of porcine pancreas lipase activity published by K. Bagi et al., 1997, were used to calc. the optimal temp., activation energy and deactivation energy of the olive oil hydrolysis rate according a resp. math. model of the reaction.
