Fusel Alcohols Production in Beer Fermentation Processes
An analysis of fusel alcohol production in stirred tank beer fermentation has been made to establish a kinetic model at different constant temperature and pH values, and to predict results in a free changing pH experiment. Comparisons with results of an industrial fermentation show that it is possible to use the model to predict these operations ifa delay time is introduced.
