Malting Properties of 2 Sorghum Cultivars and the Effect of Mashing Schemes on Their Wort Properties
Two sorghum varieties produced worts that contained maltose but at concentrations lower than those present in barley malt wort. The type of mashing scheme used did not significantly affect the amount of maltose formed in the two sorghum malt worts. There was always incomplete saccharification irrespective of the type of mashing scheme used.
