Beta-Galactosidase production by the yeast Kluyveromyces lactis on milk whey as culture medium was compared in batch and fed-batch cultures. Significant prolongation of the Phase of maximum beta-galactosidase production can be achieved by optimizing the feeding rate infed-batch cultures.
