Extraction and evaluation of the main pungent principles of solar dried West Indian ginger (Zingiber officinale ROSCOE) rhizome
The pungent principles (gingerols and shogaols) were extracted after the sliced dried ginger rhizomes (Zingiber officinale Roscoe) had been either solar dried or solar dried/steam distilled using acetone or ethanol separately as the extraction solvent. These pungent principles were monitored using high pressure liquid chromatography. Based on 100 g (dry weight basis) of the ginger rhizomes, the percentages very between 4.8 and 9.3 of the pungent principles extracted, using the laboratory scale extraction apparatus (after 200 h of extraction time). Similar values were obtained using the pilot plant extraction apparatus.
