Oxalate Depletion from Leafy Vegetables Using Alginate Entrapped Banana Oxalate Oxidase
The feasibility of depleting the high oxalate content of spinach (Spinacia oleracea), amaranthus (Amaranthus gangeticus), and paruppu keerai (Portulaca oleracea) using alginate entrapped banana oxalate oxidase is demonstrated for the first time. The relevance of this work to low-oxalate diet preparation for hyperoxaluric patients is discussed.
