Evaluation of Saccharomyces cerevisiae grown in a multistage chemostat environment under increasing levels of glucose
The concept of net consumption and/or production rates of fermentation metabolites has been proposed and applied to evaluate the performance of Saccharomyces cerevisiae grown in a multistage chemostat environment under increasing glucose concentrations (increased gravity). Results show that both rates are strongly affected by high glucose doses (osmotic pressure) and that ethanol inhibition has a profound influence on the performance of yeast cells.
