High-pressure homogenization for emulsion formation
Emulsions can be processed with different techniques. High-pressure homogenization, a method that is widely used in the pharmaceutical and food industry, is compared to other common mechanical emulsification processes. The influence of relevant intrinsic parameters of the emulsion formulation on the dispersion properties during emulsification for the most widely used techniques is also discussed. High-pressure systems are presented in detail and the average droplet sizes of own results are compared with literature data.
