Crystallization and Interface Tension at Water-Long-Chained Alcohols Interfaces
For two-phase systems of water and normal long-chained alcohols, interface crystallization is observed for alcohols with 10 to 15 carbon atoms. The study of four normal undecanols from various factories, involving interface tension measurements and determinations of melting and solidification points, together with controlled crystallization, suggests that the crystallization is induced by the presence of a monolayer of alcohol molecules adsorbed at the interface.
