사과 내에서 페놀의 확산
Diffusion of Phenol in Apples

25 ℃에서 페놀 증기에 노출된 사과에서 페놀의 축적량을 측정하였다. 과피와 과육에서 페놀의 연계 확산을 가정하여 구형 매질에서 비정상상태 확산속도식을 도출하였다. 계산으로 구한 페놀의 축적량 분율 곡선을 실험 결과와 비교하여 과피와 과육에서 페놀의 유효확산계수를 추정하였다. 조직이 치밀한 과피에서 페놀의 확산이 느려 페놀 증기에 노출된 지 5일 후에야 사과의 과육에서 페놀이 검출되었다. 페놀의 유효확산계수를 과피에서는 5.0×10-13 m2/s로, 과육에서는 1.5×10-10 m2/s로 설정하여 모사하면 사과 내 페놀의 축적량 분율 측정 결과를 잘 모사할 수 있었다.
The accumulation of phenol in apples was measured by exposing them to phenol vapor at 25 ℃. The effective diffusivities of phenol in the rind and flesh of apples were estimated by comparing the experimentally determined fractional uptake curve with the simulated ones based on a consecutive diffusion model in the rind and flesh. Phenol was detected in the flesh of apples after 5 day exposure due to its slow diffusion in the rind. The consecutive diffusion model of phenol in apples simulated well the measured fractional uptake curve when the effective diffusivities of phenol in the rind and flesh were assumed to be 5.0×10-13 m2/s and 1.5×10-10 m2/s, respectively.
