Growth mechanism of sucrose in pure solutions and in the presence of glucose and fructose
Investigations of the growth of sucrose single crystals (P2(1)) were conducted in pure solutions with 10% supersaturation at 22 and 50 degrees C and in the presence of fructose and glucose. In the first 2-3 h, dissolution was observed at the positive end of the polar b-axis of the crystals in the negative direction, however, the growth rate was initially higher than during the later growth phase. These effects can be influenced by a DC electric field and by adding the above-mentioned monosaccharides. Potential calculations supported that specific adsorption as well as the adsorption of foreign molecules occurred on various crystal faces.
