Enzyme and Microbial Systems Involved in Starch Processing
This article reviews, in brief, the important industrial uses of starch and starch processing in industry. The other aspects discussed include the main enzymes involved in starch degradation, commercially available amylolytic enzymes, thermostable enzymes from mesophilic and thermophilic microorganisms, microbial fermentation systems used in amylolytic enzyme biosynthesis, amylolytic yeasts in ethanol production from starch, and amylolytic ruminal organisms.
