Preparation of sterilized Small Anchovy through Ultrasonic Process
In this study, we prepared catechin-incorporated small anchovy(SA) through ultrasonic process. SA has many nutrition ingredient as calcium, protein, ash content, nicotinic acid, DHA and taurine more than big anchovy. Catechin can reduce the risk of four of the major health problems: stroke, heart failure. cancer and diabetes. Also, catechin should be considered essential to the diet and thus classed as a vitamin. Catechin loaded SA were prepared through ultrasonic process and investigated by BACcT, SPC (Standard Plate Culture). SEM (scanning electron microscopy). Spreading method and MTT assay measurement.
