INVERSION OF SUCROSE WITH CATION RESINS
Invert sugar syrups find applications in foods and pharmaceutical industries. Strong cation exchange resins hade been used under milder conditions to produce better quality invert sugar syrups from sucrose. Such a development is likely to prove commercially attractive. This study also indicates a strong possibility of producing high fructose syrups from cane juice as an alternative process with this technique.
