The paper is concerned with determining a role of various process parameters such as: media temperature, residence time, pH, the amount and type of substances on the rate of heat generation and the amount of gases produced during the Maillard reaction. Several parameters, important from the safety system realization such as: Time to Maximum Rate (t(MR)), Time to Maximum Pressure (t(MP)). Onset Temperature (T-ON). Temperature of No Return (T-NR) of the run-away Maillard reaction have been determinated. The Artificial Neural Network-based model of the Maillarda reaction has been proposed as a mean for predicting the reaction evolution.
