Application of difference scanning calorimetry (DSC) to reduce safety hazard in sugar beet processes under the risk of Maillard reaction. I. Influence of thermal conditions on the behaviour of magma I-III
Results of (DSC) calorimetric investigations of heat effects accompanying a Maillard reaction for technological intermediate products (magma) are presented in the study. The reaction was investigated in reference to its dependence on temperature, heating rate, heat effect and time vs. maximum reaction rate, Results of the investigations can be a basis for designing of process safety systems.
