제목 Tannin/Biopolymer Complex as a Potential Antimicrobial Glue
초록 Plant-derived tannin derivatives show molecular affinity to biopolymers, resulting supramolecular assembly. Astringent taste of tannin-containing food arises from the attachment of tannins to the proteins on tongue, indicating strong interaction even in the presence of saliva. Recent studies have suggested that these tannin/biopolymer complexes can be used as water-resistant bioadhesives. Herein, we report an antimicrobial coating based on tannin/biopolymer complexes as surface-attached reservoir for tannins that possesses intrinsic antimicrobial activity. We compared supramolecular assembly of various tannins with poly(ethylene glycol) (PEG), and evaluated stability. The complexes were pasted on a variety of surface as a reservoir releasing tannins for antimicrobial activity.
