Synthesis of antioxidant by immobilized enzyme through OFAT method |
초록 |
Naringin, a kind of flavonoid, is contained in citrus-based fruit peels and has excellent effects on cholesterol reduction and antioxidant activity. However, the application of naringin in variable industrial fields is limited because the solubility of naringin is low and it is unstable in light, oxygen and high temperature, etc. To solve this problem, the synthesis of naringin fatty acid ester is proposed. In this study, naringin stearate was synthesized through the esterification of naringin with stearic acid using immobilized lipase, and we investigated the effects of 5 different reaction parameters on the enzymatic synthesis of naringin stearate. |
