Starch application is finding increasing on various research areas such as for bio-composite film, various food products, starch-based adhesives, plastic polymer production and various pharmaceutical products. In the industrial application, starch can be used as native starch or modified-starch that can generated by acid hydrolysis, oxidation, etherification, esterification, and cross linking. In this research, starch from several agricultural sources such as potato, wheat and tapioca were modified by alkali with concentration between 1%-5% for 0, 2, 4, 6, 8 and 10 hr. Properties of alkali-modified starch was evaluated and compared to unmodified-starch. Characterization of alkali-modified starch was involved to moisture sorption capacity, swelling capacity, hydration capacity, porosity and their pasting properties. The morphology structure and evidence of alkali-modified starch was analyzed by using FTIR spectrophotometry, SEM and X-ray diffractometry (XRD). |
