Bio-Artificial Taste System Based on Taste Cells and Extracellular Matrix |

Artificial taste sensor has gained great attention in food and beverage industries due to the needs for automated and standardized analysis of the products. So far, most of the developed artificial taste systems have relied on electrical sensors composed of synthetic polymers and lipids, which cannot recapitulate complex microenvironment of tongue tissue. In this study, tongue extracellular matrix (TEM) was deployed to overcome major limitations in developing cell-based artificial tongue system by improving sensitivity, functionality, and long-term phenotypic maintenance of taste cells. The TEM-based system successfully improved adhesion and phenotypic expression of primary taste cells, as well as sensitivity to tastant, compared to collagen-based platform. The taste cell and TEM-based artificial system may provide highly efficient sensors for tastant detection.
