The surface of the most fruits is covered with a peel that provides protection against dehydration and nutrient oxidation. The epidermis of fruit peels is covered by a cuticle and several bio-cellulose layers. Cuticle wax at the outermost layer minimizes the water loss. The phenolic compounds in the epidermis protect antioxidant components in the mesocarp. To mimic the structure of fruit peels, we coated gelatin hydrogel microparticles with alternate layers of poly(diallyldimethylammonium chloride) and bio-cellulose. The outermost layer was made with dodecane nanoemulsions that are stabilized by poly(ethylene oxide)-block-poly(-caprolactone) copolymers. We also incorporate a phenolic compound, gallic acid, in the epidermis layer. Finally, we demonstrated that formation of the hybrid shell layers showed enhanced cargo retention against leakage of antioxidants as well as oxygen attack from the surroundings. |
