Isoflavones and flavones produced via the general phenylpropionic pathway in higher plants are known as good nutritious sources for anti-aging and a lower incidence of cancers because of the characteristics as fundamental bodies of several hormones, and as good active oxygen scavengers. Especially, hydroxylated Isoflavones and flavones have been reported to be more effective antioxidants thus appropriate for anti aging treatments or cancer medications. For the fast, effective, and regioselective hydroxylation of isoflavones and flavones, tyrosinase has been utilized. The amount of side products, melanin, of tyrosinase was minimized with the optimized reaction condition. As a result the conversion yield was improved threefold, and the productivity of 3`-orthohydroxydaidzein becomes 150 mg∙L-1∙hr-1. |
