New and novel food-grade packaging materials have been developed in order to meet the growing demand of bio-degradable packaging materials and the consumer demands for safer and better quality foods. The most important function of fruit-packaging paper is its gas barrier properties, specially to oxygen and carbon-dioxide. In order to improve the gas barrier properties of wax-coated, water-born coated or non-coated fruit-packaging papers, gelatin was coated on their surfaces and its properties were compared with those of chitosan- and agar-coating. The coat weight of gelatin on water-born coated paper was greater by ca. 10% than the other cases. |
