Rencently, water-soluble ingredients such as Riboflavin-5’-phosphate (R5’-P) were getting importance due to their beneficial properties for the human body. However some of them easily decomposed from water, oxygen, heat and light. Therefore suitable encapsulation of water-soluble materials is necessary for their final application. In this study, W/O/W encapsulation method by introducing a poly (propylene glycol) (PPG) as a buffering material was applied for the long term stabilization of R5’-P. Each measurement was compared with poly (ethylene glycol) (PEG) to investigate the effect of PPG. Amphiphilicity of PEG and PPG was examined with mass-cylinder photographs. Optical microscope (OM), scanning electron microscope (SEM) and confocal laser scanning microscopy (CLSM) were used to observe the morphology and inner structure of each microcapsule. In addition, loading efficiency and stability of R5’-P in each microcapsule were measured using UV-vis and fluorescence spectroscopy. |
