Enhancement of Bioactive Compounds Extraction from Coffee Residue using Bioconversion Process |

Bioconversion was carried out using cellulase and pectinase mixture (Viscozyme and Novozyme) to increase the production of antioxidants and bioactive compounds from coffee residues extract (CE). High-pressure liquid chromatography was used to compare the extraction of major substances in CE and bioconverted CE (BCE). Chlorogenic acid and caffeic acid were identified as 1.43 and 0.78 mg/g DM in CE and BCE, respectively, showing bioconversion from chlorogenic acid to caffeic acid progressed. Total polyphenol content of BCE using the enzyme mixture increased 49.1% compared to CE. Radical scavenging activity of BCE, an indicator of antioxidant activity, was 17.4% higher than CE, indicating that an increase in antioxidant activity correlated to an increase in polyphenol. As a result, it is possible to increase the production of antioxidants through the bioconversion process by the mixture of cellulase and pectinase and use them as functional foods and cosmetics materials. |
