Using QCNF (Quaternized cellulose nanofiber) and gelatin, we tried to develop a pH-sensitive emulsion that changes the stability of the emulsion according to the pH change. NMR analysis was performed by modifying hydrophobic groups in gelatin. As a result of observing the FTIR spectrum of coacervate of QCNF/gelatin, confirming that coacervate was composed of QCNF/gelatin. As a result of observing the XRD spectrum of coacervate of QCNF/gelatin, the crystal structure of QCNF could be observed in the spectrum of coacervate, confirming that coacervate contains QCNF. At pH 7.4, the change in O.D. value according to the mass ratio of QCNF and gelatin was observed. Then, when the mass ratio was 1:0, 1:5, 1:8, the change in O.D. value according to the pH change was observed. After that, the emulsion was prepared and the image was observed under an optical microscope. Stability according to time change and pH change was evaluated. |
