Rheological properties of o/w emulsions as a function of their structure
Emulsions can be characterised on the basis of their structure and rheological properties. In the paper the Cross model was proposed to determine the flow behaviour of "oil-in-water" emulsions Also the dependence of the model parameters on the concentration and the size of the inner phase droplets was studied. It was proposed to use the parameter alpha as an indirect measure of emulsions stability.
