Impact of the method and conditions of drying on the survival of bacteria Lactobacillus plantarum
The aim of this work was to determine the influence of the methods employed and drying parameters on survival and biological activity of the preparations of bacteria Lactobacillus plantarum. Bacterial preparations made in the same way were dried by fluidisation and chamber methods. It was found that in order to reach comparable humidities under the conditions of the experiments after drying, the time of drying of the preparations in fluidisation drier was by four times shorter than in a chamber on epsilon. Also, the survival of bacterial cells, subjected to fluidisation drying process was higher by ca. 30% as compared to the time of survival of the bacteria dried by the chamber drying method.
