The function of surfactants in obtaining kinetically stable emulsions, methods of obtaining multiphase emulsions and their utilization in the production of cosmetics and pharmaccutics are presented, together with experimental results of structure, stability and rheological properties investigations for some commercial emulsion products as well as for the emulsions obtained in the laboratory.
