Enzymatic esterification of starch phosphate with oleic acid

Monostarch phosphate was esterified with oleic acid in presence of a corn. lipase biocatalyst at 60 degrees C for 10 days. The structure of the ester was confirmed by H-1 NMR and FTIR spectroscopies. The substitution degree was 0.125. Thermal and rheolog. characteristics of the product were also given.
