The technological properties of isomalt and its enthalpy of solution and glass transition are described. The transformation temperature (glassy state --> subcooled liquid) T-g is usually readily obtainable by differential scanning calorimetry (DSC), which detects a characteristic change in the specific heat capacity at T-g.
